My daughters used to like things like string cheese, granola bars, cheese and crackers. Apples, oranges, tangerines, grapes, pears, carrot sticks. Pretzels, popcorn, they are low fat and high in fiber just get the low salt kind. These are the snacks that my kids liked and still do even though they aren't so young any more. They are 34.30 and 16 and they still snack on these items. IF you teach them good nutrition now they will most likely stick with it when they are older.

Beef Fiesta Shells
A Mexican meal on the healthy side.
Prep: 20 minutes
Cook: 35 minutes
Servings: Serves 6
1 lb. 96% lean ground beef
or - 1 package fully cooked ground beef or shredded beef
1 small white onion, chopped
1 small can chopped green chilies
1 cup grated, reduced fat, cheddar cheese
1 jar (12 ounces) picante sauce (mild or medium)
1 small can tomato sauce
1 small can french fried onion rings, divided
18 large pasta shells (stuffable kind)

Cook pasta shells according to directions. Preheat oven to 350°F.
In a bowl, combine tomato sauce, picante sauce and one cup of water. Set aside.
If using fully cooked ground beef, saute onions until soft. Add beef and continue as below, omiting salt and pepper.
Brown meat with onions, salt and pepper. Add green chilies, 1/2-cup of cheese, half a can of onion rings and ½ cup of prepared sauce.
Stuff shells with meat mixture. Pour remaining sauce over shells. Bake uncovered for 30 minutes.
Sprinkle remaining onion rings and cheese over the top. Bake for 5 minutes, or until cheese is bubbly.

Sloppy Joe Biscuit Cups
Kids will love this recipe.
Prep: 10 minutes
Cook: 25 minutes
Servings: Serves 4-5
1 lb. lean ground beef
1/4 cup finely chopped celery
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1/2 cup prepared barbecue sauce
1/4 tsp. salt
1 can (12 ounces) refrigerated flaky buttermilk biscuits
5 slices Cheddar cheese, quarted

Heat oven to 400°F. In large nonstick skillet, brown ground beef, celery, onion and bell pepper over medium heat 6 minutes or until outside surface of beef is no longer pink, breaking beef up into 1/2-inch crumbles. Pour off drippings. Stir in barbecue sauce and salt. Simmer, uncovered, 2-3 minutes stir occasionally.
Meanwhile place 1 biscuit into each of 10 ungreased standard-sized muffin cups press dough firmly onto bottoms and up sides of cups. Spoon approximately 1/4-cup beef mixture into each biscuit cup.
Bake in 400°F oven 10-12 minutes or until edges of biscuits are golden brown. Arrange 2 pieces of cheese on top of each biscuit cup. Continue baking 1-2 minutes or until cheese is melted. Let stand 1 minute. Loosen edges of biscuit cups before removing from pan.
Low Fat Kid Pleasing Breaded Fish
INGREDIENTS:
1 1/4 pounds firm white fish, such as cod or halibut
1 egg lightly beaten
1 1/2 cups breadcrumbs
1 tsp dried mixed herbs
1 tsp paprika
Freshly ground black pepper
PREPARATION:
Preheat oven to 450 degrees. Place a large cookie sheet coated with nonstick cooking spray in the oven.
Meanwhile cut fish into chunks. Put beaten egg into a small bowl, and combine breadcrumbs, herbs, paprika and pepper in a large shallow bowl.
Remove cookie sheet from oven.
Dip the fish first into the egg and then into the breadcrumb mixture and on to the cookie sheet.
Repeat with each piece of fish.
Bake for 8-10 minutes, turning once, until fish is cooked through.
