Did your school lunch get changed?

Ours were good last year. Now we barely get any food and its all nasty

Answer
Yes, I work as a Kindergarten Teacher, and our school lunch menu got changed at the end of last year, so that we could offer a "healthier" menu. Even the teachers often used to buy lunch at school if we didn't feel like packing a lunch that morning, and now we won't even touch the food that the cafeteria sells. They switched from cheeseburgers to plain turkey burgers on whole wheat buns, which are absolutely disgusting and have some sort of weird chewy chunks in them, and they also only offer white pizza on whole grain dough now, which tastes worse than dog food probably tastes. They stopped selling chips of any kind, and now they only offer apple slices, yogurt, or salad with low-fat dressing as a side.

It's all because the parents were complaining about the school's "unhealthy" lunch menu. Well, if they didn't like the lunch menu, then why didn't they go to the grocery store, buy "healthier" food, and pack their kids' lunches themselves? I don't understand why they had to make everyone else eat disgusting, tasteless food just because they felt like their kids weren't eating healthy enough. When I was in high school 8 years ago, a daily lunch menu option was chili poured into an open Frito's bag, and they called it "chili tacos"... lol. I ate it all the time, and I was still always a thin 110 pounds! What people don't understand is that as long as their kids are active and fit fruits and veggies into their diets at least once a day, then they will still be healthy, and they won't become obese.

Camping menu?

When our entire family goes camping - grandma & grandpa, adults, the grandkids, and maybe friends - we keep the pie irons busy most of one day. One trick we learned is to use butter-flavored cooking spray to generously coat the pie irons before each use. We have 4 regular irons and 2 waffle irons. If you can think of it, we have probably have tried making it in our pie irons. I sometimes prepare some 'fillings' at home, and keep them in the cooler, so the wait time is reduced when we get hungry. "Are they ready yet?"

>> Use Jiffy brand mixes and made pancakes and waffles - the pie iron people also make waffle irons. Make sure your irons are well oiled and hot. Great for breakfast or snacks.
>> We slice potatoes and make potato chips (like home fries).
>> Prepare taco meat at home. Fill soft flour tortillas with meat, cheese, and whatever else you like in a burrito. Fold to completely enclose, and grill in your pie iron. Ole!
>> One night when camping we usually have stew, chicken or beef. Make the gravy real thick. The next day you can use the left overs to make "pie iron pot pies, using a spoon or two of stew between the bread slices. Top with extra gravy. Yummo!
>> Besides the usual bread, experiment with tortillas, egg roll wrappers, and refrigerated biscuits, crescent rolls, or pizza crust.

A Sunday morning favorite for our family is "Eggs-In-A-Bag".
Get a supply of lunch bags. Cut bacon strips in half and line bottom of bag. Crack egg into cup, then gently add over the bacon. Okay, you can break the yolks, or even scramble them if you prefer. Sprinkle with salt & pepper. Fold over the top of the bag several times to seal. You will want a medium hot batch of coals under your grill, no flames. If you can hold your hand over the coals, at grill height, for a count of 3 or 4 you have a medium heat. After 5 minutes peek in to see if they are done yet. (even after years of doing this we still keep checking - this is an art, not a science) The bacon will not get crispy brown, but it will be fully cooked. When finally ready rip open the bags and enjoy. You can eat them as is, or top them with cheese, salsa, or whatever else tickles your tongue.

Have fun camping, and eating.
