Money is tight right now as we have baby now, and I'm staying at home to raise our son. I just want some ideas on things that I can do besides what I do now. I keep the house clean, laundry kept up, and make meals and lunches for my man but I want to do something a little extra to let him now how much I appreciate him. I tell him often how much I love him and how thankful I am for him. Any cute ideas, or suggestions please!

Answer
I may not have a man, but I sure do know a lot about love ^___^

1.) draw a hot bath
2.) give him a kiss on the cheek/lips when he leaves for work
3.) make him a card from paper, and put it in his bag/suitcase. So that way in the morning, he can read it.
4.) make breakfast in the face of a smiley (this is good when your making pancakes)
5.) give him a massage
6.) secretly hold is hand and say "sorry, my hand got lost trying to find yours."
7.) sit in his lap
8.) do that spaghetti thing those dogs did in that movie "Lady and the tramp"
9.) If he's not too busy, call him at work and tell him how much you love/miss him. But don't do this too much. It could get annoying.
10.) Take him to see a romantic movie with you
11.) Tell him how much you have a joy being around him
12.) Ask him about his day at work
13.) cover his eyes from behind and say "guess whooo." and when he answers "who?" keep his eyes covered, and give him a kiss
14.) tickle him
15.) say that he's your "knight n' shiny armour"
16.) say that you feel safe when your with him
17.) tell him that you have a surprise for him and to cover his eyes. when his eyes are coverd, give him a kiss

Yeah, some of these are corny. But corny is the new cute :)

What are your tips for making-ahead and freezing cookies and candies for gifts?

I know you can make chocolate chip cookie dough, drop onto an aluminum-foil-lined sheet pan, freeze, then drop the cookies into a freezer bag to be stored for up to 3 months then baked straight from the freezer... any other AWESOME ideas?

Answer
Take a scoop (like the lunch ladies used in the school cafaterias) and scoop your cookie dough out. Your cookies will be more even in size and the baking time will be more even. They can be found at any restaurant supply shop or kitchen store and are commonly referred to as "dishers".

Place your cookies on a parchment lined baking sheet (better than aluminum because no chance for alzheimers and less issues w/sticking). Then once they are frozen, bag them in ziplocks of groups of 6 or 12 and then in a larger freezer bag. They should then last up to 6 months if your freezer isn't packed and defrosting all the time.

The inside of truffles (ganache) can be made and scooped and frozen the same way. When you are ready to use them, pull them out of the freezer, give them a bit of thaw time (not too much), and coat them with chocolate, nuts, cocoa, or whatever.
